The white house on the corner of Main and Earp Streets (a.k.a. The Brown-Holloway House (c. 1840)) is the future home of Pimiento Tea Room.
Owners Matt and Christy Griffith are bringing a unique take on tea service to downtown Holly Springs. In a casual setting with a funky vibe, Pimiento is essentially going to be a small plates restaurant inspired by the South’s favorite ingredients.
Pimiento will offer lunch, dinner, and Sunday brunch with a creative craft cocktail menu featuring tea-infused spirits. A carefully curated selection from Tin Roof Teas of Raleigh will give guests premium options for hot and iced teas, perfect for every time of day or season. Pimiento will offer a rotating menu of soups, salads, sandwiches, savories, and sweets.
The shareable nature of the concept reflects the sense of community that inspires the Griffiths. “We want to nourish the sense of community that we’ve experienced in Holly Springs. It’s reflected in every detail from the layout of the dining and lounge spaces right down to the shareable small plates menu,” says Matt.
Preserving a historic home with some intriguing details from its past while celebrating and embracing today’s Holly Springs, the Griffiths are on the right track to creating a welcoming and fun spot for folks to enjoy with their family and neighbors, and hopefully meet some new friends.
While Matt and Christy are personally investing in the design phase of their dream, they are looking for additional investors to bring it to life. They know there are others who understand the value of Pimiento Tea Room both to the community and as an investment. Osteria G
A new restaurant has opened in the former Little Hen space. The man behind the restaurant is local chef and restauranteur Gianni Cinelli, an Italian-born, NY-raised chef that has been in the restaurant business his entire adult life. “This restaurant is a labor of love; it’s coming from the heart. I’ve always wanted to open a proper Italian restaurant. I want to bring the best that Italy has to offer to Holly Springs,” says Cinelli. “This is not a pizzeria. This is more of what you would find in a small town outside of Rome.”
With offerings like Nido di Salciccia (Homemade Italian sausage with broccoli rabe, roasted red and yellow peppers), Filetto di Manzo al Chianti (Angus Filet pan seared in Chianti red wine sauce over polenta and broccoli rabe) and Salmone al Cartoccio (Atlantic Salmon in a parchment pouch with aromatic herbs served with sautéed vegetables) it’s easy to see that this is not the typical Americanized Italian eatery. The name Osteria is a tip to his Italian heritage. An Osteria is a restaurant in Italy that serves food and wine, with an emphasis on local offerings.
The restaurant is a dinner-only service. It opens daily at 4pm, and is closed on Monday.

Holly Springs ENT
Holly Springs now has a designated full-time ENT office. The new office is located across from Holly Springs Elementry on Holly Springs Road.
Dr. Eric Mansfield has had a successful ear, nose, throat and allergy office in Fayetteville for the past 15 years. He attended Howard University in Washington, D.C. and received his undergraduate degree in Chemistry. He also attended Morehouse School of Medicine located in Atlanta, where he obtained his Doctor of Medicine in 1991. While at Morehouse, Dr. Mansfield received the Family Practice Student Award. He then relocated to New Orleans, Louisiana to attend Surgical Residency at Tulane University School of Medicine from 1991-1993. Dr. Mansfield was awarded the Teaching Resident of the Year by the Department of Surgery, OWL Club Outstanding Resident Award, and Intern of the Year for his work between 1991-1992.
Dr. Mansfield then completed his Otolaryngology residency from 1993-1996. He acted as Chief Resident for the Tulane School of Medicine’s Ear, Nose, and Throat program from 1996 to 1997. Dr. Mansfield became board certified by the American Board of Otolaryngology—Head and Neck Surgery in 1998.
He has been living in Holly Springs for the past three years, and recently made the decision to open a practice here in Holly Springs. The practice is at 500 Holly Springs Road, and is expected to open in early March.
OAKVIEW INNOVATION PARK
The Town maintains three Certified Sites that provide a combined nearly 400 acres of land in order to attract another large bio-tech or life science company. The Town Economic Development department works closely with the Wake County Economic Development department to certify and market these sites. As North Carolina Certified Sites, these properties have undergone a series of tests including environmental assessments to confirm their suitability for development.
Two such properties are Oakview Innovation Park and Green Oaks Tech Center. Oakview is adjacent to the Holly Springs Business Park. This North Carolina State Certified site consists of 140 acres of greenfield development that will yield approximately 80 contiguous acres of buildable land. Due diligence has been performed on the property and studies reveal a very good site for a large single user or campus style development. Green Oaks is an additional 60 acres of land, and is east of the site and available for purchase if desired.
